Happy Friday everyone! Finally the weekend, YAY! My name is Torie and I am the slightly silly woman behind the wheel at Lattes and Love where you'll find anything from what I'm reading/listening to lately, what's going on in my writing life, the craziness that is college and of course all things coffee and love related.

Instead of Humorous Hump Day, I've decided to veer my direction towards more things that make me happy instead. I saw this quote: " What did you do for fun when you were ten years old? Because that's probably something you'd enjoy now" from the Happiness Project and it made me think of the first time I learned about the Beatles. I think I was the only 5th grader at my school OBSESSED with the Beatles! To this day they still make me happy!

Motivational Monday

Aaaand it's Monday again! How was your weekend? Ours was actually pretty productive. We spent Saturday out in the yard (it's already in the 70s here and we had a forest of weeds growing!) and Sunday we almost ran 5 miles! (4.8 to be exact). Hubby signed us up for a Half Marathon in March so we have got to get busy training!

Whether it's running or just needing to get something done, I thought these posters were pretty motivational to help you accomplish just about anything today! Don't give up on what you are trying to achieve this week!

I am so excited to show you today's Miss Independent, Ms. Natty Michelle who makes the cutest wedding maps AND she is a writer for Discovery Channel. I wonder how she does it all?

She has even been featured on Wedding Bee & Style Me Pretty and her artwork is just adorable. Not getting married? That's OK you can still order one of her cute notecards :)

1.What made you decide to start your own business? (what was your biggest factorthat helped you commit to the decision)

I was actuallylaid off -- I was an account executive for an Atlanta advertising agency --before the holidays in 2009. I was so upset at first -- not knowing where mynext paycheck would be coming from was a scary thought. I scraped by for alittle while using financial aid and concentrated on my artwork more than ever-- I had more free time on my hands, so why not give it my all? A few monthslater I got a writing gig with the Discovery Channel, and I still work theretoday. It's a job I can do from home, which I love, and it allows me tocontinue my Etsy business from home full-time, too.

2.What was your biggest risk or fear about starting a business?

The fear offailure is something that every freelancer deals with; it's scary to putyourself out there and risk being judged or criticized by others. I've learnedthat rejection is simply a part of life -- not everyone is going to love mywork, and that's OK. I truly value all feedback I get from my customers --every day is a learning experience, and I tweak my business model oftento accommodate new processes and ideas.

3.How did you know what you wanted to do?

I never really knew, exactly -- what Ido now evolved from things that I like, like snail mail, for example. I lovesending cards in the mail to friends and family for birthdays, thank yous, orjust because. I started making my own thank you notes using my illustrations asthe cover art, and one day decided to sell them using Etsy. Other items I makeand sell, like my wedding maps, only happened because I made a map for my ownwedding when I got married in 2010. Once I posted my map on my blog and onEtsy, they really took off! Now I paint maps for brides all across the country-- and as far away as Australia!

4.What support system do you have for your business?

My friends andfamily have been incredibly supportive of my venture, so I am a lucky gal. Mymom actually helped me at two craft shows in December, and my husband is alwaysmy biggest supporter in everything I do, 110%. He believes in me, even when Idon't!

5.Do you have a "real" job to supplement income, or are youself-sufficient?

I am a writerfor The Discovery Channel -- I write creative content for their Web site tosupport everything from TLC television shows to TLC weddings and beyond.

6.What is the best advice you have for someone wanting to start a business?

I always tellpeople that the most important thing I've learned is to do what you love --even if it's in your spare time -- and put yourself out there. You never knowwhat might happen while you're busy pursuing your passions. My jobwith The Discovery Channel came to be because a friend of a friend reads myblog, and when the job became available in her department, she recommended mebecause she thought the content on my blog proved that I was a good fit for thewriting position. Through Etsy, I've achieved something I never thought I would-- I sell my artwork to awesome, nice people on a daily basis -- and I make aliving doing it, too! It's the best thing in the world, and something I alwaysdreamed about, but I didn't know how to make it happen...and never expectedthat it would happen. Take a few baby steps, and expect to learn alongthe way. If you work hard and stay passionate, great things will happen!

I help plan weddings in the Seattle area and absolutely LOVE my job. My favorite part, apart from getting to know and become friends with my clients is designing and styling their event, helping them use DIY touches to personalize their special day and save some moolah while we’re at it.

1. What made you decide to start your own business? (what was your biggest factor that helped you commit to the decision)

I have always loved to plan and decorate. To make fun favors, DIY craft projects, I love it all! I grew up with an amazing mother who was so creative and crafty! She had a ceramics shop while we were growing up and we would paint and hang out all the time. My mother also taught us to sew and we knew how to make clothes while I was in elementary school. She has been such an amazing influence in my life and I know I got my creativity from her example!

I started an Etsy shop a few years back to have an outlet for my creativity. There was no creativity in Biology at UW (go Huskies!) or in my job so this was important to me. From my shop I created many items FOR weddings . . .

I always "dibs" planning friend's showers, parties, etc. When any of my family members or friends would plan their weddings I would be more than eager to help make wedding invitations, decorate, organize, plan, you name it I loved it!

THEN I met the love of my life and got to plan my own wedding and was in cloud 9 . . . of course with being in love AND with planning the wedding. SO much fun.

The thought had crossed my mind of planning weddings, BUT I had a friend that was doing that and I didn't want to "copy". But thinking about it more and more . . . it started to creep up more in the back of my mind. Then one date night with the hubby he convinced me to just do it. It just felt right! So we went home, created a wedding blog, website, etc and started advertising and off it went!

2. What was your biggest risk or fear about starting a business?

My biggest fear is what if people weren't happy with my work, or how things turn out. This is a service industry, and everyone has different styles. My style will not always coincide with theirs. Also there is pressure, planning pretty much one of the biggest days of their lives. They have spent so much money on this one day and I just want it to be PERFECT (kind of a perfectionist!). So far so good though!

I've since learned that we are our biggest critic, and just to silence my doubts. As you go and get fabulous reviews and feedback it gives you more conifance in yourself and your skills, and that self doubt goes away.

3. How did you know what you wanted to do?

It just felt right. I wasn't sure what would happen when I made the decision to open up my own wedding planning business, but I just plunged right in with all my passion and determination. I prayed a lot about it too, because I am an all or nothing kind of person and I wanted to make sure it was the right direction to take our life. Everything just progressed perfectly and I just knew.

4. What support system do you have for your business?

First and foremost is my husband. He has been the best! He understands my late nights, our loss of some weekends. He drives me to events, helps me set up at wedding shows, and is my go to when I need advice, although he's such a guy and doesn't really care about girly details and weddings he still tries to help and it's pretty adorable!

Also all of my friends and family are super supportive. I know I can count on craft nights with my girls, and advice and a listening ear from anyone around me. I am truly blessed to have so many supportive people around me!

Oh and don't forget my lovely blog friends! The sweet comments I get on a daily basis make me so happy!

5. Do you have a "real" job to supplement income, or are you self-sufficient? (And if it's personal, just feel free to kick me!)

I DO have a "day job" for now. I am a lead Orthodontic Assistant and love that too! I work pretty much (4) 9 hour days, but then I have 3 day weekends for weddings! It's nice to be able to do what I love without having to charge an arm and a leg to supplement. I know I just have to work extra hard now (with both jobs), but it is an investment in our future! When the hubby and I do decide to have kids, I can raise them and do weddings on the weekends. Right now we can enjoy life, and travel the world before we do reach that next milestone in life (children!).

6. What is the biggest advice someone gave you?

I LOVE this job and I just know it is what I am supposed to be doing. If you have that dream and motivation you truly can do anything. You just have to keep going even when you doubt yourself.

What I've heard from others is this: Surround yourself with amazing supportive people, or find a mentor. You need a support system when you take any big leap of faith in life.

Have you ever been inspired to do something unique and creative on your own, but didn't ~~have the~~ ~~guts~~ know where to start? Well with a new year we have a fresh start where opportunities are just waiting at our fingertips. And to help get the inspiration brewing, I am proud to introduce a new series:

Miss Independent will feature lovely ladies who kicked their fears to the curb and created their own path. I am also super excited because I absolutely adore my first interview, Angela Hardison! Angela has a beautiful blog, and is currently a freelance graphic designer.

Angela's blog features amazing photography and is genuinely adorable. You may also recognize her fabulous plate wall that was featured on Design*Sponge:

From letterpress invitations to creating charming anniversary gifts, if you haven't already checked out her work, you now have no excuse not to! (PS: Did I mention she just found out she is pregnant? So exciting!)

What made you decide to start your own business? (what was your biggest factor that helped you commit to the decision)

When I was ready to graduate from college, I started looking around and interviewing for jobs in my area. Nothing piqued my interest. Along with the help and support of colleagues and family, I realized that starting my own business would be the best way to ensure a career that allowed me freedom, flexibility, and creative control.

What was your biggest risk or fear about starting a business?

Looking back, it's funny how fearless (and to be honest, kind of clueless) I was. Starting fresh out of school allowed me to be that way because I didn't have much to lose. One of the riskiest parts was not knowing if or when I'd have a stable income.

How did you know what you wanted to do?

Initially I dreamed of being an architect. At some point I was introduced to graphic design and everything fell into place from there. I grew up loving colors, typography and patterns -- so when I realized you could have a career playing with all of those things it seemed like a perfect fit.

What support system do you have for your business?

First: the people. I couldn't do it without a supportive husband, family and friends rooting me on, clients that keep coming back and referring others my way, and of course the Internet community. Having an online presence comes with the most incredible support system and it has made all the difference!

Second: business organization tools that have made me more efficient. I'm pretty sure that Harvest (time-tracking, invoicing, project management tool) changed my life and especially my productivity.

Do you have a "real" job to supplement income, or are you self-sufficient?

I feel very blessed that design is my "real" job. As I've transitioned to freelance design, I've noticed even more that it can be as profitable as I want it to be and just depends on what I'm willing to put in.

What is the biggest advice someone gave you?

Some of my favorite advice is this: put your head down and get to work. If you are passionate about something and willing to work hard, success will come.

California, Here We Come

Hubby and I are getting ready to pack our bags and spend a week in Sunny Southern California with my grandparents for Christmas! Well for as long as last week lasted, the weekend sure didn't feel like staying any longer did it? The good news is I just have one more week before my Christmas Break! Hubby and I were working all weekend long getting ready for Christmas (ie wrapping presents)

Happy Monday everyone! I hope you all had a fabulous weekend/ Thanksgiving Break! I was a little spoiled seeing as I had the whole week off! I am still recovering from a weekend filled with food, family & friends!

This is what my Thanksgiving looked like:

We also did plenty of playing! My parents live in McKinney, Texas and they had the downtown area decorated for Christmas for their Annual Dickens of a Christmas

We also had a great time meeting up with old friends, and even found time to play at Six Flags Over Texas! Oh, and how could I forget? Of course we got some "light" shopping in! One thing is for sure: I am definitely ready for Christmas Break! Thanksgiving really is the perfect Christmas "Kick-Off"

Scenes From my Weekend

Hubby and I had a super relaxing weekend. We spent it my favorite way: In the kitchen!

One thing that I actually love about living in Houston is this time of year! The temperature is in the 70's and 80's and the plants LOVE IT! Everything is blooming in my backyard and it looks beautiful.

I also spent a lot of time watching Food Network and figuring out what I am going to make for Thanksgiving and spent some time practicing in the kitchen

I ended up making some homemade Chick Fil A breakfast & I made a Tiramisu Cake.

The Chick Fil A sandwiches are SUPER easy. First, get the super tasty Sister Schubert Rolls.

Then get some frozen potato rounds, slice up some chicken breasts into very small pieces (The smaller, the better) and toss them in some egg and breadcrumbs. The secret is triple dunking them in the egg and breadcrumbs to make sure they are extra crispy. We just threw some olive oil in a pan and fried them about 2-3 minutes on each side. Super delicious and super easy!

I am so excited for Turkey Day this week! We are headed to Dallas on Wednesday to see my family! Yay! What will you be doing for Turkey Day?

More Recipes for Monday

Sigh... it is so sad to see another weekend come to an end. Hubby and I had a great time walking for Race for the Cure to support my friend Erica. It was actually somewhat chilly in the morning, which was nice! To celebrate at school we made pink mustaches for all the boys, and someone even showed up with pink shoelaces!

And after doing Race for the Cure, I REALLY want a pair of these!

We spent the rest of the weekend being SUPER lazy. Many naps were involved. We also were able to catch up on our shows, How I Met Your Mother, Modern Family and a new one: Pan Am! Have you guys watched it yet? It is actually somewhat intriguing!

So the 30-Day Go Fresh Challenge is almost coming to a close. We only have 4 more days left! For the most part, we actually made everything that we ate from scratch, or we went organic (ie making chicken broth each week was getting a little too hectic). Or, we would try to eat out at restaurants that promoted local and organic menus, like Ruggles and Stella Sola. Hubby's Birthday made it a little difficult to not eat at home all the time....

To celebrate finishing the challenge we are going to have a huge vegging out party involving ordering a pizza along with lots of Ben & Jerry's! Speaking of which, have you heard?

I'm so excited to try this on Friday (the day we are allowed to quit the challenge). But I have also heard some stores are banning the flavor? I hope it is just a rumor!

Too Hot to Handle

OK I've finally made time to get my amazing weekend down on my blog... And only 1 day before the next crazy weekend is about to start! (This weekend Hubby has Tour de Cure and then we are celebrating with Fajitas!)

OK and HOLY COW. I just found this crazy article about how processed foods are loaded with Trans Fats (even baked bread from a bakery) which can lead to health problems, including a stroke. What did they recommend for fixing this problem friends? Making your own, fresh foods! What are the odds of that?

Another thing I didn't think about?
Baking Soda and Baking Powder = Loaded with Sodium! Yikes!

OK AND NOW FOR OUR TOTALLY AWESOME WEEKEND

Chili Relleno Fiesta
(I made the Charro Beans!)

Check out my friends recipe for the chilis here. It's not necessarily healthy, but it was delicious and I couldn't turn it down!

Recipe for Charro Beans:

1 pound of pinto beans
1 onion, chopped
3 jalepenos, chopped
4 red hot chili peppers or serrano peppers chopped
5 pieces of bacon, chopped
bay leaf

Saute onions and peppers in a stock pot.
Add bacon and cook for 5 minutes.
Add pinto beans and enough water to cover (About 3 quarts)
Throw in a bay leaf and bring everything to a boil.
Lower heat and simmer, with lid on for 2-3 hours.
Add salt, pepper, garlic powder and onion powder to taste.

Then on Sunday, we went to the in-laws for dinner, and I discovered you can actually make your own Creme Fraiche! How exciting!

So then we had THIS amazing dinner

Fresh Roasted Salmon
*Sigh* Wish I had taken a picture!

2 shallots, minced
4 tomatoes, chopped
1/2 cup creme fraiche
4 salmon fillets
fresh basil and parsley

Saute Shallots about 2 minutes until browned.
Add tomatoes and cook about 10 minutes
Reduce heat, and add creme fraiche.
Cook 1-2 more minutes, then remove from heat. Set aside.
Preheat oven to 325 degrees Farenheit.
Saute salmon in a pan with olive oil for 2 minutes. Sprinkle with salt.
Flip salmon and cook an additional 2 minutes. Sprinkle with salt.
Place salmon in a roasting pan and cook in the oven about 5 minutes, until the salmon is opaque.
Add basil and parsley to sauce, and place on top of salmon.

Whew! Fall is on it's way, and is it just me or has there not been enough time in the day? We had a great time celebrating Hubby's birthday and we are just pooped from everything going on!

Here's what we ate last week:

Yes, we actually made our own pumpkin puree! It was actually really easy!

All you have to do is:

1. Cut out the stem of a medium pumpkin

2. Cut the pumpkin in half

3. Remove the seeds

4. Roast on a pan in the oven 45 minutes to an hour at 400 degrees Fahrenheit (until you can break the pumpkin with a fork)

5. Let the pumpkin cool for at least one hour

6. Remove the skin from the pumpkin, and puree in a food processor.

Makes about 8 cups of pumpkin... now you have enough for risotto, muffins and a pumpkin cake!

OK OK and I have to make a little confession.... we didn't make our own mayonnaise! *Gasp* We are just feeling exhausted from making EVERYTHING from scratch, and are trying to take it easy this week. But we did get Organic Mayonnaise and I did find this awesome recipe to make for the future:

Middle of the Week Recipes!

I can't believe we have already made it past Thursday! 1 more day and then FREEDOM! It feels so good to say that! Hope you are ready to make plans for the weekend!

Sorry I have been M.I.A. this week. We have been busy busy busy with our cooking adventure. We made our own tomato sauce, starting with homemade stewed tomatoes:

Homemade Stewed Tomatoes

5 pounds tomatoes

Place tomatoes in boiling water long enough for the skin to crack.
Remove from boiling water and place them in an ice bath.
Peel skin from tomatoes, squeeze out seeds
Puree in blender and set aside
Cut in half (Makes about 2 24-ounce cans worth)

Homemade Tomato Sauce

1 onion
4 cloves of garlic
Fresh Oregano & Basil
3 Stalks of Celery, Chopped
1 tbsp of Sugar
1 cup of red wine
Salt, Pepper & Crushed Red Pepper

In a pot, saute diced onion, garlic and olive oil
Add chopped celery
Add fresh parsley, oregano and basil, salt and pepper, crushed red pepper
Add half of fresh stewed tomatoes (about 24-ounces)
Puree, and simmer for 2 hours.

Next time I might try frying the eggplant. Baking is definitely more healthy, but I think frying it might give it an extra oomph!

This recipe rocks, and you can totally make it completely vegetarian. Definitely makes great leftovers!

Whoo Hoo! We survived Monday! How does it feel?

I want to thank all of you for your support in the 30 Day Challenge! It has been an amazing journey, and we have made it one week already! So since we've come this far, I thought it would be fun to do a Good/Bad/Cool/Ugly for the Challenge.

Good

Trying a bunch of yummy new foods

Bad

Craving fast food. We NEVER eat fast food, and now all of a sudden…
Extremely Time Consuming. Our whole weekend was absorbed around food.

Cool

I’ve been trying to eat more veggies, and I can already tell it’s made a huge difference in my skin.
We have started to feel better and we have more energy (to clean the kitchen afterwards, Ha!)

Ugly

Too. Many.Dishes. Every time I think I’m finally done, it’s time to start cooking again and clean! Now I definitely see where the idea for American “conveniences” came from.

I have been researching different ingredients on Food Network, and trying to base our meals around the vegetables ourselves. Some of our new and adventurous recipes have turned out AWESOME, while others we weren't so sure about. Here is a recap of what we ate this weekend:

(we skipped on the pickles and used a pork chop instead of the pork patties)

Neither Hubby or I had ever cooked with a fresh artichoke before. We tried this recipe for Stuffed Artichoke, but we weren't sure how to eat it once it was done. Any tips for cooking with artichoke?

Mmmm I was actually craving this today instead of a candy bar or fast food! Maybe my body is adjusting to this diet after all?

I can't believe we have only made it 4 days in the Challenge! It feels like much longer! And I have to say, Wendy's and Pizza Hut never looked so good! I think it's just the psychological aspect of "not" having something available... you want it all the more! The upside to the Challenge so far? I am already noticing HUGE improvements in my skin! The downside? Not having snacks available when I'm hungry. Fruit, nuts and an occasional Cliff's Granola Bar (organic) are about the only things we have on hand at the moment.

But Hubby and I are staying strong! And I must say, we are loving having more veggies in our diet. We spent $30 on veggies alone at the Farmer's Market the other day! Meanwhile, we are just going to take it easy this weekend as we have a bunch of busier weekends ahead of us!

In other news, our new coffee table made it in this morning!

I also found this blog that offers a free calendar of fresh available food depending on the time of year!

So I know what you are probably wondering... Where are the recipes? Well here are Days 3 & 4 of the Challenge, plus our Saturday Morning Breakfast!

Every time I make a whole chicken, I am amazed at how easy it is, as well as how good it tastes!

This dinner was absolutely amazing. Of course the star ingredient was the homemade Hollandaise Sauce:

1. Whisk together 3 egg yolks

2. Cook over a double boiler, but make sure it is not too hot or the egg will cook too fast. You want the eggs to stay runny. This should take about 1-2 minutes.

3. Stir in a stick (1/2 a cup) of butter, but make sure eggs are off of heat

4. Add salt, pepper, & lemon to taste

***We served tomato, basil and mozzarella sandwiches with the soup on our homemade bread***

***fresh bread crumbs are super easy, especially if you have bread that is starting to get stale***

Mix in food processor:

4 pieces of toasted bread

1 tbsp dried basil

1 tbsp dried oregeno

1 tbsp dried parsley

1/2 tbsp onion powder

1/2 tbsp garlic powder

1 tsp crushed red pepper

1 tsp fresh cracked pepper

1 tsp salt

*Note, dry ingredients work best for this, so the breadcrumbs stay dry*
