What.A.Week!

Whew! Fall is on it's way, and is it just me or has there not been enough time in the day? We had a great time celebrating Hubby's birthday and we are just pooped from everything going on!

Here's what we ate last week:




Yes, we actually made our own pumpkin puree! It was actually really easy!

All you have to do is:

1. Cut out the stem of a medium pumpkin
2. Cut the pumpkin in half
3. Remove the seeds
4. Roast on a pan in the oven 45 minutes to an hour at 400 degrees Fahrenheit (until you can break the pumpkin with a fork)
5. Let the pumpkin cool for at least one hour
6. Remove the skin from the pumpkin, and puree in a food processor.

Makes about 8 cups of pumpkin... now you have enough for risotto, muffins and a pumpkin cake!

OK OK and I have to make a little confession.... we didn't make our own mayonnaise! *Gasp* We are just feeling exhausted from making EVERYTHING from scratch, and are trying to take it easy this week. But we did get Organic Mayonnaise and I did find this awesome recipe to make for the future:

Once again you stun me with these recipes! I've never actually cooked anything other than pumpkin seeds from an actual pumpkin, but that risotto looks so good...

oh you are killing me with that pumpkin risotto. i already love risotto enough now you are gonna make me wan to have it every dang day just so i can put pumpkin in it, looks like a yummy recipe!

You know what I just realized??? I have NOOO IDEA what tarragon is... Is it an herb? Root? Leafy thing? Why don't I know? I'm kind of ashamed of myself...
