We spent the long weekend getting ready by making some things ahead of time to last the week!
On Saturday Hubby made some fresh baked bread
Get the recipe here
Then I made scones and muffins for breakfast
On the menu for the rest of the week?
- Creamy Carrot Soup and Grilled Cheese Sandwiches
- Roasted Chicken with Sweet Potatoes
- Baked Ham with Asparagus and Scalloped Potatoes
- Pasta with Broccoli, Prosciutto and Butternut Squash
Hubby also made our own Chicken Broth (for the soup tomorrow)
What you will need:
- 1 whole fryer chicken, previously cooked
- 1 gallon of water
- 1 turnip
- 2 onions
- 1 whole head of garlic
- 4 whole carrots, chopped
- 1 bunch of celery, chopped
- 2 bay leaves
- fresh parsley & oregano
- salt & pepper
- Chop the chicken, carrots and celery into large pieces so it fits into the pot
- Bring everything to a boil
- Reduce heat, and simmer for 2 hours

wow what a great week of meals looks terrific. can i come over to your house for dinner? i love homemade bread and that scone recipe looks great i have never made savory scones but will have to try one day soon
