30-Day Go Fresh Challenge!

And so it begins!
(If you missed how the Challenge works, check it out here)

We spent the long weekend getting ready by making some things ahead of time to last the week!

On Saturday Hubby made some fresh baked bread
Get the recipe here

Then I made scones and muffins for breakfast

On the menu for the rest of the week?
  • Creamy Carrot Soup and Grilled Cheese Sandwiches
  • Roasted Chicken with Sweet Potatoes
  • Baked Ham with Asparagus and Scalloped Potatoes
  • Pasta with Broccoli, Prosciutto and Butternut Squash

Hubby also made our own Chicken Broth (for the soup tomorrow)

What you will need:
  • 1 whole fryer chicken, previously cooked
  • 1 gallon of water
  • 1 turnip
  • 2 onions
  • 1 whole head of garlic
  • 4 whole carrots, chopped
  • 1 bunch of celery, chopped
  • 2 bay leaves
  • fresh parsley & oregano
  • salt & pepper
  1. Chop the chicken, carrots and celery into large pieces so it fits into the pot
  2. Bring everything to a boil
  3. Reduce heat, and simmer for 2 hours

How was your Labor Day weekend? Do you have any "fresh" plans this week? Happy Monday/Tuesday! :)
